This is one of our favourite treats and is a healthier version of a classic food made with extra protein and without grains.
The following makes 4 crepe-like pancakes.
Put all ingredients together in a bowl and mix together using a blender or stick-mixer until you get a smooth batter. The batter is quite runny, which is usual for crepe making.
Heat a medium size fry pan (20cm) on medium to high flame. Grease it with a little butter before pouring a small amount of batter for each pancake. Use just enough mixture to cover the bottom of the pan.
When the batter is no longer runny, looks dry and begins to turn golden at the edges, turn the crepe over gently (by poking at the sides first) and bake the other side for about 20 seconds or until golden. Use of a quality teflon-free non-stick fry pan is recommended.
Cover with your favourite toppings. Believe it or not a thin slice of cheese compliments perfectly.
